Is it difficult driving a van?

I currently own a Ford Sable, but I want a bigger car. Me and my friend wish to travel for cheap, and we looked into van, specifically camper vans. I was looking into a Chevy Astro van, but they are quite large, and seems easily rollable. I also live in Minnesota, where the roads can turn dangerous. So I was wondering if a van is a safe and easy idea, or I should stick with smaller vehicles. Thanks.
