My car tempurature keeps moving?

My car tempurature keeps moving up and down when its nearly halfway the car runs smoothly when it moves down towards the colder side nearly on the C it runs rough and starts spluttering and jolting.

When its running on warmer side its great when cold runs like crap but moves up then down while driving.

Any ideas please its an xr6 03 ford sedan
