Is it impossible for any charges against Donald Trump to stick simply because he would resign and President Pence would pardon him?

Mike Pence has been 100 percent loyal to Trump and has had his back every step of the way.

If Trump resigned or were impeached, Mike Pence would be more of a shoe-in to pardon Trump than Gerald Ford ever was for Nixon.

And that's the thing about the federal system. You don't actually have to be convicted of a crime in order to be pardoned, the way you do in most State systems.

In fact, to receive a Presidential Pardon, you don't even have to be CHARGED.

Hence, Gerald Ford was able to pardon Nixon for "all possible charges related to the Watergate incident" despite the fact Nixon had not yet been charged with a crime.

That eliminates the possibility of Prosecutors simply waiting until Pence is out of office before charging Trump. Pence will have had Trump covered in advance.
